Quinoa Beef Minestrone Soup |

This is a high protein, high fiber version of the traditional soup. Ingredients:
1/2 lb beef, cut in thin strips |
2 garlic cloves, minced |
1 tablespoon olive oil |
2 cups frozen mixed vegetables |
8 ounces tomato sauce |
1/4 cup quinoa |
1 cup quinoa pasta |
15 ounces red beans |
6 cups water |
2 ounces beef bouillon |
2 bay leaves |
1 teaspoon dried basil |
1 teaspoon salt |
1/4 teaspoon cayenne pepper |
Directions:
1. 1. In stock pot, brown beef and garlic together in olive oil. 2. 2. Remove fat. 3. 3. Add the remaining ingredients. 4. 4. Bring to boil. 5. 5. Cover and simmer 30 minutes. |
