A good way to use leftover Thanksgiving turkey! Ingredients:
1 cup quinoa |
3 cups spinach |
3 tomatoes |
2 tbsp. olive oil |
4 cloves garlic |
4 cups chopped turkey |
2 cups chicken broth |
1/2 onion |
Directions:
1. Prepare quinoa with chicken broth, according to package directions 2. Finely chop spinach and saute in olive oil with chopped tomatoes, onion, and garlic 3. Reduce heat and add chopped turkey to the spinach mixture, and warm thoroughly until the turkey is coated 4. Serve the turkey and spinach mixture atop hot quinoa |
