all the ingredients are able to be frozen so you can keep them in the fridge and then just microwave and toss them together for a quick, delicious and healthy side dish or salad...
Ingredients:
1/2 cup cooked quinoa
1 cup cooked green beans
1/4 cup grape tomatoes that have been sauteed in garlic and olive oil
1/2 english cucumber- chopped
*optional things to try--- chopped kalamata olives, crumbled feta
Directions:
1. Put all ingredients together in a bowl.
2. Toss well.
3. Serve cold or at room temp as a salad
4. OR-Leave out the cucmber and serve warm as a side dish.
