Quinoa and Cucumber Salad |

From the Star Tribune Ingredients:
1 cup quinoa, rinsed |
coarse salt and pepper |
2 tablespoons red wine vinegar |
1 tablespoon olive oil |
1/2 english cucumber, quartered lengthwise and thinly sliced |
3 green onions, thinly sliced |
1/4 cup fresh parsley |
Directions:
1. In medium saucepan, bring quinoa and 1 cup salted water to boil. Reduce to simmer, cover and cook until water has been absorbed, about 11-13 minutes. 2. Transfer to medium bowl and cool to room temperature. 3. To quinoa, add vinegar, oil, cucumber, green onions and parsley. 4. Season with salt and pepper, toss to combine. 5. Serve at room temperature or chilled. |
