Great go to dinner. Not much prep..the lemon dressing saks in and adds even more flavor.Bringing this to a baby shower... Ingredients:
1 20 oz can kidney beans |
2 c cooked and cooled quinoa (3/4 c raw) |
1 red onion,finely chopped |
2 bunches basil,stems discarded,leaves chopped |
juice of 2 lemons |
1/2 c extra virgin olive oil |
salt and pepper |
Directions:
1. In large bowl,mix together the kidney beans,quinoa,onion,and basil. In small bowl,whisk together lemon juice and 1/2 c extra virgin olive oil;season wit saltand peper. Pour dressing over the quinoa salad and toss to coat evenly. |
