Sweet and delicate quinoa pudding, a nice variation on the traditional rice pudding, flavored and enriched with fresh bananas. Ingredients:
1 1/2 cups water |
3/4 cup quinoa |
1 cinnamon stick |
2 cups whole milk or soy milk |
2 ripe bananas |
2-4 tablespoons white or brown sugar or 1/4 cup agave syrup |
salt to taste |
1/2 tablespoon butter |
Directions:
1. Rinse and drain the quinoa. Bring water, cinnamon stick and quinoa to a boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover, and simmer for 15 minutes. Remove from the heat and discard the cinnamon stick. 2. Blend together the milk, bananas, sugar OR syrup and salt in the bowl of a blender or food processor until smooth. Pour the milk mixture into the saucepan with the quinoa. 3. Place the pan over medium heat. Cook stirring constantly until the mixture becomes thick and creamy, 5 to 10 minutes. Remove from the heat. Stir in the butter and serve warm or cold. Garnish with cinnamon powder. |
