Quince With Pine Nuts And Rum Lime Sauce

If you have never had quince fruit then you are in for quite a treat. This recipe is so delicious. Also, if you don't have access to quince you can substitute apples and still have a wonderful dish.
Ingredients:
3 small quinces (or 3 large baking apples)
1 tbs chopped rosemary
3 + 2-3 tblsp acacia honey
2-4 tbs rum
4-5 tbs pine nuts
the juice of 1 lime
1 cups water
Directions:
1. Chop up the pine nuts and rosemary finely and mix with honey and let sit while you get the rest ready.
2. Peel 1 quince (or apple) and chop it up finely. Put this in a bowl with lime juice, 2-3 tbsp of honey, and rum. Let this sit.
3. Peel the rest of the quinces (or apples) and split them lengthwise. Spoon out the core of the fruit so you have a nice hole in the middle.
4. Heat your chopped quince (or apple) mix with water. Put the quince (or apple) halves in the pan and simmer.
5. Turn the quince over and then cook until tender. Add water as needed.
6. Now take out the quinces and put aside.
7. If the quince sauce is too runny let it simmer a bit more to thicken up. It should be a syrup-type consitency.
8. Fill up your quince holes with pine-nut and rosemary.
9. Pour your sauce in a tin/pan and put the pan with your quince halves on the grill for a few minutes until their surface is golden brown.
