Delicious, creamy, potato soup with baked potato fixin's! Don't make this if you are watching your calorie/fat/anything intake! Ingredients:
4 cups potatoes, shredded |
1 1/2 cups chicken broth |
2 tablespoons butter |
3/4-1 teaspoon celery seed |
1 cup chopped onion |
2 tablespoons parsley, snipped |
1/2 teaspoon salt |
1 teaspoon season salt |
1/4 teaspoon white pepper |
1 teaspoon dill weed |
3 dashes crushed red pepper flakes |
1 cup milk |
1 3/4 cups cream |
8 ounces cream cheese |
crumbled bacon |
fresh snipped chives |
shredded cheddar cheese |
Directions:
1. In a pan combine first 11 ingredients. Bring to a boil. 2. Cover and simmer about 20 minutes. 3. Add 1 cup milk. 4. Add 1 3/4 cup cream. 5. Add in 8 ounces cream cheese. 6. Stir until combined and smooth. 7. Return to boil then simmer until potatoes have finished cooking. 8. Remove from heat. 9. Garnish with bacon, chives and shredded cheddar. |
