I make this when I am hungry and want something quick, filling and tasty. It is better if you add more veg but if you don't have a pre-chopped bag it doesn't make it as quick. :) Carrot, cabbage, and bell pepper are traditional. You can add meat too, pork and chicken fit best. Ingredients:
1 cup cooked spaghetti or ramen noodles or yakisoba noodles (yakisoba noodles are better, but hard to find, ramen is second best, spag |
1 large egg (scrambled) |
1/2 tsp vegetable oil |
1/3 tsp sesame oil |
1/2 medium onion (coarsely chopped) |
1 tsp fresh ginger (finely chopped) |
1 tbsp soy sauce |
1 1/2 tsp rice wine vinegar |
1 tsp mirin |
1/2 tsp ground black pepper |
Directions:
1. Heat on medium high to high heat both oils in a pan (frying pan is fine, it is a bit easier to do in a wok). 2. Add onion and ginger. Cook for 1 minute. 3. Add scrambled egg and sprinkle a little pepper over the egg. Cook until set and break into pieces. 4. Add noodles and stir, Cook for 1 minute. 5. Add mirin, soy sauce and rice vinegar. Cook until liquid is absord. 6. Add pepper to taste. 7. Serve hot and enjoy! |
