Excellent and simple recipe is so delicious. We had it with Fresh Water Bass and even mixed it in with the spinach! Very fresh and yummy! We did not use salt, although the original recipe calls for it. Wasn't necessary at all! Ingredients:
1/2 cup tomatoes, seeded and chopped |
1/2 spanish onion, chopped |
2 t fresh cilantro, chopped |
67 g lime, (2-in. lime) juiced |
1 t olive oil |
14 g jalapeno, (1 small pepper) minced |
1 pepper |
Directions:
1. Stir tomato, onion and cilantro together in a small bowl. 2. Stir in lime juice, olive oil and chile pepper. 3. Season w/ salt and pepper to taste. 4. Refrigerate while preparing fish. |
