Quick Wasabi Cucumber Pickles |

These taste great alongside raw fish and rice or tucked into an asian- inspired taco. They also make a lovely garnish for smoked salmon and cream cheese. Ingredients:
2-3 kirby cucumbers, sliced paper thin |
1/2 tsp salt |
1/2 tsp wasabi powder |
2 tbs brown rice vinegar |
1/2 tbs sugar |
1/4-1/2 tsp soy sauce |
Directions:
1. Toss the cucumbers with the salt and leave them to drain in a colander for 15 min. 2. Mix the wasabi with 1/2 tsp of water to form a paste; leave to stand for a few minutes 3. Drain cucumbers and pat them dry. 4. Add vinegar, sugar and soy to the wasabi paste and whisk to combine. Add cucumbers and toss to mix. Serve immediately or chill in the fridge. |
