This is a quick soup that warms the soul on those cold days that nothing will do but a nice bowl of soup! Ingredients:
2 quarts of beef stock or broth |
1 can tomatoes, chopped |
1 envelope onion soup mix(dry) |
1 large can mixed vegetables or frozen stew vegetables |
1 can carrots |
1 can corn |
1 cup elbow noodles |
1 bag frozen onion mixture(seasoning mix) |
3 tablespoon butter |
1 package hormel roast beef slow cooked meals (sold in meat section of grocery) cut into bite size pieces |
1 can tomato paste |
several dashes hot sauce(crystal's or tabasco) |
1 teaspoon garlic powder |
1 teaspoon cracked pepper |
salt and cajun spice to taste |
Directions:
1. Bring broth to a boil. 2. Stir in seasoning mixture(onion mix) and soup mix, lower heat and cook on medium heat for 5 minutes. 3. Stir in noodles and continue for 5 minutes longer. 4. Add vegetables, beef( add juices from container too), tomato paste,butter and tomatoes. 5. Simmer 20 minutes. 6. Season with hot sauce, garlic powder, pepper and cajun spice. 7. You can add what vegetables you like best. 8. Enjoy! |
