Ingredients:
2 tablespoon(s) olive oil |
1 large chopped onion divided |
2 clove(s) garlic minced |
1 can(s) (15 oz) black beans undrained |
1/2 cup(s) (or so) flavored meat of choice cut into small chunks |
herb mix (such as emeril's southwest) 1 tbs. or to taste |
hot pepper sauce (3-5 drops) or bbq sauce to taste |
hot cooked rice |
Directions:
1. Heat oil in skillet over medium. Add half of onion (reserve remainder for garnish) and garlic. Cook 3-5 mins., or until tender. Stir in remaining ingredients except rice. Simmer, uncovered, 6-8 mins, or until desired consistencey is achieved. Serve over rice and garnish with onion to taste. |
