From the American Diabetes Association. 90% lean ground beef water cumin chili powder cayenne pepper onion salt 6-inch flour or corn tortillas shredded, reduced-fat cheddar cheese shredded lettuce large tomato, diced hot pepper sauce (optional) cvt Ingredients:
1 lb 90% lean ground beef |
5/8 cup (1/2 cup plus 2 tbsp) water |
1 tsp cumin |
1 tbsp chili powder |
1/4 tsp cayenne pepper |
1 tsp onion salt |
8 medium (6 inch) flour tortilla or corn tortillas |
1/2 cup reduced-fat cheddar cheese, shredded |
1 cup shredded lettuce |
1 large tomato, diced |
1/4 tsp hot pepper sauce, or less, to taste |
Directions:
1. Brown beef in a large nonstick skillet over medium-high heat until thoroughly cooked and no longer pink. Drain fat. 2. Add water, cumin, chili powder, cayenne pepper, and onion salt and simmer 2-4 minutes. 3. Warm tortillas. Fill each tortilla with 1/4 cup taco meat, 2 tablespoons cheese, lettuce, tomato, and hot pepper sauce. 4. Lower sodium variation: Use onion powder instead of onion salt. |
