Quick Spanish-Style Rice

My version of spanish rice that I can make quickly.
Ingredients:
1/2 large onion, finely chopped
2 cups water
2 cups instant brown rice
1 (15 ounce) can stewed tomatoes
1 teaspoon creole seasoning
1 dash ground red pepper (optional)
Directions:
1. Saute onion in a little olive oil until soft.
2. Add water, bring to a boil.
3. Add rice, bring back to a boil.
4. Reduce heat, simmer for 4-5 minutes.
5. Remove from heat and let stand for 5-7 minutes.
6. Add can of stewed tomatoes, crushing with your hands as your pour them inches (you can leave chunks bigger if preferred). Add Creole seasoning and red pepper (more or less to taste).
7. Simmer for about 10 minutes.
