A nice healthy recipe for a hot summer day. Can be made ahead and served cold or room temperature. Ingredients:
1 package soba noodles, cooked, and rinsed under cold water |
1 lime juiced |
3 tablespoons soy sauce |
1 teaspoon sesame oil |
1 tablespoon olive oil |
1 clove garlic, grated or minced |
1 thumb-sized ginger, grated |
salt and pepper |
1 head broccoli, blanched |
1 red pepper, thinly sliced |
1 yellow pepper, thinly sliced |
3 scallions thinly sliced |
sesame seeds , for garnish |
Directions:
1. Whisk together lime juice, soy sauce, oils, garlic and ginger and toss with noodles and veggies. 2. Toss with and garnish with scallions and sesame seeds. |
