The whole family will enjoy these colorful slightly sweet squash medley. Land-O-Lakes Cookbook. Ingredients:
1/4 cup butter or 1/4 cup margarine |
1 1/2 cups butternut squash, peeled cubed 1-inch pieces |
1 1/2 cups yellow squash, unpeeled quartered, sliced into 1/2-inch pieces |
1 tablespoon brown sugar, firmly packed |
1 pinch nutmeg |
1 1/2 cups zucchini, unpeeled, sliced 1/8-inch pieces |
salt, to taste |
Directions:
1. in 10 skillet melt butter, stir in remaining ingredients except zucchini. 2. cook over medium heat, stirring often. 3. stir in zucchini, continue cooking until squash are crispy tender. |
