This receipe is one I created to fill my need for something good and quick for breakfast. It makes a good snack during the day also. I eat two for breakfast every morning and they are even better the second day after baking. Can keep on the shelf for 5 days. Probably can be refrigerated or frozen but haven't done so. Ingredients:
3 large ripe or very ripe bananas |
1 large egg |
1/3 cup melted margarine |
2/3 cup honey |
2 cups oat bran hot cereal |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 teaspoon ground cinnamon |
1/4 cup brown sugar |
paper baking cup |
Directions:
1. In medium mixing bowl mix brown sugar, oat bran, baking soda, baking powder, salt and ground cinnamon. 2. In blender put bananas and liquify, add egg, melted margarine, & honey liquefying as needed after each addition. to mix well. 3. Pour mixture from blender over dry ingredients and mix well with spatula. 4. Put 1/4 dry cup measure in each Paper baking cup. 5. Bake at 350 degrees for 25 minutes. 6. Remove to rack to cool and store in covered container. |
