Not a classic ceviche but quick, easy, and very tasty Ingredients:
1/2 lb med shrimp, shelled deveined and cooked |
1 large cucumber, peeled, seeded, and coarsely chopped |
1/2 med red onion, thinly sliced |
1 clove minced garlic |
3 roma tomatoes coarsely diced |
1 fresh jalapeno, seeded and veins removed, minced |
1/4 c fresh cilantro leaves |
juice from 1 orange |
juice fom 1 lime |
juice from 1 lemon |
1/4 teas ground cumin |
1/4 teas oregano |
salt and pepper to taste |
Directions:
1. Place the sliced onion in a bowl of salted water for 10 minutes and then drain (this is remove the bite ) 2. In a small bowl combine the lime, lemon, and orange juices with the oregano, cumin, and garlic. 3. In a glass bowl toss the rest of the ingredients and toss well 4. Pour the citrus mixture over the top 5. Refrigerate for at least an hour, stirring occasionally. 6. Adjust the salt and pepper 7. Serve on a lettuce leaf or in a long stem martini glass but on a plate or in a bowl and it will taste just as good |
