This recipe works equally well with lemons—use 3 quartered. Use the fruit in grain salads, pasta dishes, or legume-based tagines. Ingredients:
2 cups water |
1/4 cup kosher salt |
4 limes, quartered |
10 black peppercorns |
1 cinnamon stick |
1 bay leaf |
Directions:
1. Combine all ingredients in a saucepan; bring to a boil. Reduce heat, and simmer 1 hour. Cool to room temperature; cover and refrigerate. Discard peppercorns, cinnamon, and bay leaf before using. |
