Quick Pierogies Casserole |

I haven't tried this one yet. It looks good and I love pierogies. Ingredients:
1 (16 ounce) package frozen pierogies |
1 (28 ounce) can crushed tomatoes |
2 large onions |
1 (8 ounce) package mushrooms |
3 tablespoons salad oil |
1 tablespoon parsley |
1 garlic clove, minced |
3/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. About 45 minutes before serving prepare pierogies as label directs. 2. If boiled drain. 3. Dice tomatoes, thinly slice onions and mushrooms. 4. In a 12 inch skillet over med heat sauté onion mushrooms and garlic in oil until soft and golden. 5. Add tomatoes parsley salt and pepper and 1/2 cup water. 6. Heat to boiling. 7. Cook 5 minutes. 8. Preheat oven to 350°F. 9. In a 2-quart casserole arrange pierogies and onion mixture. 10. Cover and bake 30 minutes or until heated through. 11. Sprinkle with parmesan cheese if desired. |
