Ingredients:
2 large cucumbers, thinly sliced
2 teaspoons salt
3 tablespoons sugar
2 teaspoons crushed red pepper flakes
4 garlic cloves, minced
1 tablespoon asian fish sauce
1 tablespoon soy sauce
2 tablespoons sour beer (optional)
Directions:
1. Cover the slices with half the salt and sugar and let them rest for 15 minutes. They'll leach out a little liquid, so I did this in a strainer.
2. Place the cucumbers in a bowl with all of the other ingredients, and let them marinate for 15-30 minutes.
3. Enjoy!
