Tired of gray jarred pickled asparagus, I created this deep green appetizer. Ingredients:
bundle of thin fresh asparagus |
water to cover |
1 tbls. salt |
gallon ziplock bag |
1/2 c. vinegar |
1/2 c. water |
1 clove garlic, thinly sliced |
3/4 t. allspice |
6 peppercorns |
3/4 t. coriander |
1 nutmeg cut in large chunks |
1/2 t. hot pepper flakes |
1 t. salt |
3/4 t. sugar |
Directions:
1. Place enough water to cover asparagus in a non-reactive pan. 2. Add salt and bring to boil 3. Add asparagus and cook 1 minute ONLY 4. Remove to ice bath and place well drained spears in ziplock 5. In same pan, bring remainder of ingredients to a rolling boil 6. Let stand to cool 7. Add cooled pickling spices to the asparagus in the ziplock 8. Refrigerate and begin enjoying brite green pickled asparagus after 4 hrs. (very little difference in taste after 4 hrs. Keeps for up to 2 weeks but goes a little gray after 3 days. |
