Quick Orzo Salad (Robin Miller) |

Ingredients:
8 ounces orzo pasta |
2 tablespoons olive oil |
1 tablespoon red wine vinegar |
1/4 cup minced red onion |
1/2 cup grape tomatoes |
1/4 cup chopped fresh basil leaves |
salt and freshly ground black pepper |
Directions:
1. Cook orzo according to package directions. Drain and transfer to a large bowl. Stir in olive oil, vinegar, red onion, tomatoes and basil and toss to combine. Season, to taste, with salt and black pepper. |
