Quick N Easy Corn And Black Bean Salsa |

Made this on the fly last night with what I had on hand, and we loved it! Will be making often. Ingredients:
1 can black beans, drained and rinse |
1 c +/- niblet or shoepeg corn |
1 can rotel tomatoes with lime & cilantro |
1 med/large ripe red tomaote, diced |
approx 1/4 c jarred roasted red peppers, diced (or roast your own, but that won't be quick n easy...lol) |
1/4 red onion, chopped |
1 lime wedge |
1 t chopped garlic |
1 t chopped cilantro (i had dried, so i used it. fresh would be better) |
Directions:
1. Combine all ingredients and chill about 45 minutes before serving, to give flavors time to marry. 2. Serve with tortilla chips and sour cream alongside your favorite mexican dishes! 3. ** I only had a bag of frozen niblet corn, which cooks in just a couple of minutes, so I cooked it, and stuck it in the freezer to cool while I did my chopping ** |
