My friend gave me two cans of chicken gumbo soup to try. The main reason being that I will not even try okra! So I opened one can to taste....very salty to me and nothing to write home about....so I did some searching on the internet and came up with this version. Ingredients:
1 tablespoon olive oil |
1 small onion, chopped |
1/2 small green pepper, chopped |
8 ounces crabmeat (canned is fine for this) |
8 ounces shrimp (i used fresh but cut up) |
2 1/2 cups diced tomatoes (if canned, use the liquid too) |
1 (4 ounce) can tomato paste, mix in |
1 cup water |
2 (15 ounce) cans chicken gumbo soup |
fresh ground black pepper |
Directions:
1. In large saucepan, saute onions and green peppers in olive oil until onions just start to change color. 2. Add rest of ingredients and simmer on low at least twenty minutes. 3. Great served with big spoonfuls of cooked white rice! |
