Quick Marinated Mushrooms |

This recipe came to me from a dear friend. I use these flavorful mushrooms as a side dish or to garnish an entree. They're always a big hit at potlucks. —Sylvia Raynor, Corvalis, Oregon Ingredients:
1/3 cup water |
1/4 cup cider vinegar |
2 tablespoons vegetable oil |
2 tablespoons olive oil |
2 garlic cloves, peeled and cut into wedges |
1 bay leaf |
4 teaspoons minced fresh parsley |
1/2 teaspoon dried basil |
1/4 teaspoon dried oregano |
1/4 teaspoon dried thyme |
1/4 teaspoon pepper |
1/8 to 1/4 teaspoon salt |
1/2 pound fresh mushrooms |
Directions:
1. In a bowl, combine the water, vinegar, oils, garlic, bay leaf, parsley and seasonings. Add mushrooms; toss to coat. Cover and refrigerate for at least 6 hours. Discard bay leaf. Serve with a slotted spoon. Yield: 2 servings. |
