Quick Lemon- Broccoli Rice

This zesty lemon rice and broccoli dish will please all those rice and lemon fans
Ingredients:
quick lemon – broccoli rice
1 can (10 3/4 oz.) condensed chicken broth
1 cup small broccoli flowerets
1/3 cup shredded carrot
1 1/4 cups quick-cooking rice, uncooked
2 tsp. lemon juice
black pepper to taste
Directions:
1. In a 2 -quart sauce- pan, over high heat, bring broth to a boil. Add broccoli and carrot. Return to a boil. Reduce heat to low. Cover; cook 5 minutes or until vegetables are tender.
2. Stir in rice, lemon juice and pepper. Remove from heat. Cover and let stand 5 minutes or until liquid is absorbed. Fluff rice with fork before serving.
