my partner calls these vancouver dumplings due to the multicultural ingredients and the reflection of our laid back west coast style. Ingredients:
60 -100 wonton wrappers (round ones if you can find them) |
1 3/4 cups mashed potatoes (i'm going to use instant) |
3/4 cup cottage cheese |
1 bunch green onion, chopped (just the green part) |
1/4 cup bacon bits (i'll use imitation to keep it vegetarian) |
salt and pepper |
1 teaspoon dill |
1/2 teaspoon curry powder |
Directions:
1. wonton wrappers are thin so use a pastry brush to brush a little water on one side of each and stick two together, wet sides inches. 2. mix rest of ingredients, adjust to taste. 3. fill wrappers, fold in half and use water along the edge to seal, be sure there's no holes. 4. drop into boiling water for a min or two, don't over cook. 5. if desired, pop into a frying pan with heated butter for a few min to crisp the outsides. 6. serve with sour cream, chopped green onions, bacon bits, more cheddar, or whatever else you want. |
