                    Quick Lamb Stew Ingredients: 
                    
                        
                                                2 tbsp olive oil  |  
                                                1 1/2 lb lamb, cut into 2 inch pieces  |  
                                                4 carrots, cut into 3 inch sticks  |  
                                                1 onion, sliced  |  
                                                1 tbsp flour  |  
                                                1/2 cup white wine  |  
                                                2 cups chicken broth  |  
                                                14 2/5 oz diced tomatoes, canned, drained  |  
                                                4 oz green beans, cut into small pieces  |  
                                                1 cup parsley  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Heat 1 tbsp oil in a large pot over medium-high heat. Season lamb with salt and pepper. Cook, turning occasionally until medium-rare, 6 to 8 minutes. Transfer to a plate. 2. Add carrots, onion and remaining oil to pot. Cook until begin to soften, 3 to 4 minutes. Add flour and cook 1 minute more. Add wine and scrape up any browned bits. 3. Add broth, tomatoes and beans. Simmer until vegetables are tender, 8 to 10 minutes. Stir in lamb, parsley and salt and pepper to taste.                              |
