Quick Homemade Tomato Soup |

This is a family favourite that we have been enjoying for years. It is very quick and easy to prepare. We usually serve it with drop biscuits. Ingredients:
2 tablespoons butter |
2 tablespoons olive oil |
1 medium onion, chopped |
1 stalk celery, diced |
1 medium carrot, trimmed and diced |
1 (28 ounce) can crushed tomatoes |
4 cups chicken broth |
1 tablespoon basil |
1 tablespoon fresh parsley leaves |
salt and pepper |
Directions:
1. Melt butter and oil in a 2 qt saucepan. Add onion, celery and carrot. Cook over low heat for 10 minutes or until vegetables are soft. Add tomatoes and broth. Bring to a boil. Reduce heat, simmer partially covered for 30 minutes. Stir in remaining ingredients. Serves 6. |
