This is based on the Middle-Eastern Spice mix; the salt turns it into an American-style rub. Adapted from the Barbecue Bible. This makes enough for 4-6 pounds of meat, poultry or seafood.
Ingredients:
3 tablespoons black pepper
3 tablespoons ground cumin
3 tablespoons ground turmeric
3 tablespoons coarse salt
1 teaspoon ground cardamom
Directions:
1. Combine all ingredients in a jar.
2. Cap tightly and shake until well-combined.
3. Keeps up to 6 months if stored away from heat and light.
