Quick Ham And Veggie Quiche |

Excellent quick bake that will please anyone, and is easy to make. Makes a great dinner meal! Ingredients:
1 lb cooked ham, cubed |
1 large zucchini squash, grated |
1 large carrot, grated |
1 large onion, diced |
1 tbsp butter |
1 tbsp vegetable oil |
4 eggs |
1/3 cup milk (can be substituted with 2 tbsp of sour cream and 1/4 cup of seltzer water) |
1/3 cup of flour (substitute with soy or gluten flour if counting carbs!) |
1/4 tsp salt |
1/4 tsp black pepper |
1 tbsp parsley (dry or fresh, chopped) |
1 tbsp dill (dry of fresh, chopped) |
1/4 cup shredded parmesan cheese |
Directions:
1. Preheat your oven to 425F 2. In a large skillet melt butter with vegetable oil. 3. Add vegetables, saute for 1-2 minutes, stirring occasionally. 4. Add ham and saute for another 1-2 minutes. 5. Add salt, pepper and herbs - I added 1 tbsp dry parsley and 1 tbsp dry dill. 6. Cook for another minute or so. 7. Beat the eggs with milk or sour cream mix, until you see them foaming a little. 8. Add some salt and black pepper to the egg mix. 9. Stir in flour. 10. Fold the vegetable mix into a baking pan that is 2 deep. 11. Pour the egg mix over the vegetables. 12. Bake in the middle of the oven for 30 minutes. 13. In the last 5-7 minutes, sprinkle parmesan cheese over the bake, and complete baking when cheese is golden-brown and bubbly. |
