Don't let the name fool you; this is not your grandma's old fashioned fruitcake. Ingredients:
1 (15 5/8 ounce) package quick bread mix (i chose cranberry) |
1/2 cup pecans, chopped |
1/2 cup raisins or 1/2 cup dates, chopped |
1/4 cup maraschino cherry, chopped |
1/4 cup crushed pineapple, drained |
Directions:
1. Prepare quick bread batter according to package directions. 2. Stir in remaining ingredients. 3. Pour into a greased 9x5x3 inch loaf pan. 4. Bake at 350 for 55-60 minutes or until toothpick inserted near center comes out clean. 5. Cool for 10 minutes before removing from pan to wire rack. |
