I found this on and have lightened it up a bit AND cut the original recipe in half. I adore feta, I adore crackers...this is an easy win! I will say that if you use plain feta you might want to include some garlic powder, or perhaps some dried oregano. Maybe even add some olives/crushed red pepper/spinach? The possibilities are deliciously endless! Cook time does not include chill time. Ingredients:
8 ounces feta, crumbled (i used garlic herb flavored) |
8 ounces neufchatel cheese, softened |
1/8 cup green pepper, chopped (or use red for holiday colors) |
1/8 cup green onion, sliced |
1/8 cup walnuts, chopped fine |
parsley (optional) |
Directions:
1. Beat cream cheese and feta at medium speed until well blended. 2. Stir in remaining ingredients. 3. Refrigerate, covered, until chilled through. 4. Form into a ball and roll in fresh parsley if desired. 5. Serve with veggies, pita chips, or crackers. |
