Quick & Easy Vegetarian Black Bean Chili |

This is a version from Southern Living magazine. I've added a couple things to it though!! Ingredients:
3 (15 ounce) cans black beans |
1 large sweet onion, chopped |
1 (12 ounce) package veggie crumbles, i use morningstar |
2 tablespoons vegetable oil |
4 teaspoons chili powder |
1 teaspoon ground cumin |
1/2 teaspoon pepper |
1/4 teaspoon salt |
1 (14 ounce) can low sodium chicken broth |
2 (14 1/2 ounce) cans rotel tomatoes, original |
1/2 cup dark beer |
3 tablespoons hickory flavored barbecue sauce |
1/4 cup brown sugar |
1 (6 ounce) can tomato paste |
Directions:
1. Rinse and drain 2 cans black beans; do not drain third can. 2. Saute chopped onion and burger crumbles in hot oil in a large dutch oven over medium heat; about 6 minutes. 3. Stir in chili powder, cumin, salt and pepper; saute one minute. 4. Stir in drained and undrained beans, chicken broth, rotel tomatoes, beer, bbq sauce, brown sugar and tomato paste; reduce heat to low and simmer for 10 - 15 minutes. 5. Serve chili with desired toppings (sour cream, cheese, etc.). |
