Quick & Easy Potato-Rosemary Galette |

So easy, so tasty! Can be either a main dish or a side. Best part for me is that there are no eggs! Ingredients:
4 medium baking potatoes |
1 teaspoon dried rosemary, crushed |
1 teaspoon salt |
1 teaspoon pepper |
3 tablespoons butter |
Directions:
1. Peel potatoes and quickly shred. 2. Mix together shredded potatoes, rosemary, salt and pepper. 3. Melt 2 tbsp of butter in a large non-stick skillet over med-high heat. Add the potato mixture, pressing them into an even layer with a broad spatula. 4. Cook for 2 to 3 minutes, pressing down occasionally, until lightly browned on the bottom. 5. Dot the top with the remaining butter, cover skillet and reduce heat to medium. Cook for 6 to 8 minutes, until potatoes are tender when pierced. 6. Uncover and place a large flat plate over skillet. Invert galette onto plate then slide back into skillet and increase heat back to med-high. 7. Cook for 5 minutes or until browned on the bottom. Slide out of skillet onto serving plate. |
