This is definitely a family favorite, and it's quick enough for a week-night meal! Ingredients:
1 lb large shrimp, peeled & deveined |
1 lb smoked sausage |
1 lb chicken breast, cubed |
1 onion, diced |
1 red pepper, diced |
1 tablespoon olive oil |
1 teaspoon salt |
1/2 teaspoon pepper |
1 (10 ounce) package yellow rice |
3 1/2 cups water |
1 (4 ounce) jar pimientos |
cajun seasoning, to taste (optional) |
Directions:
1. Heat olive oil over medium-high heat. Add chicken, onion, and pepper to olive oil. Season with salt and peper; cook about 5-7 minutes, or until chicken starts to brown. 2. Add sliced smoked sausage and cook another 5-7 minutes. 3. Add rice mix, water, and pimientos. Cover and cook about 20 minutes, stirring occasionally so rice doesn't stick. 4. Add shrimp and cook about 5-6 minutes, or until shrimp is opaque. Season with Cajun seasoning to taste, if desired. |
