This is the easy way to a good New England Clam Chowda without the shucking and straining of making it from scratch. I found this online awhile back and tweaked it a bit. Ingredients:
1 (10.75 ounce) can condensed cream of celery soup |
1 (10.75 ounce) can condensed cream of potato soup |
1 (10.75 ounce) can new england clam chowder (campbell select is best) |
2 (6.5 ounce) cans minced clams |
1 quart half-and-half cream |
1 pint heavy cream |
dill and thyme to taste (optional) |
thicken with 2 tbl cornstarch mixed with water and cook 1 minute if not thick enough for your taste |
Directions:
1. Into a slow cooker mix 2. cream of celery soup 3. cream of potato soup 4. clam chowder 5. 1 can UNDRAINED clams 6. 1 can drained clams, additional clams may be added to your taste 7. half-and-half and whipping cream 8. optional dill and/or thyme or add at end after tasting 9. Cover, and cook on low for 6 to 8 hours. |
