Easy chili pasta meal, the whole family loves this one. Ingredients:
1 lb lean ground beef |
1 tablespoon olive oil |
1 medium onion, chopped |
1 tablespoon mexican chili powder |
2 cups salsa (hot or mild) |
2 cups frozen corn |
1 (19 ounce) can kidney beans, drained & rinsed |
1 (28 ounce) can diced tomatoes |
12 ounces rotini pasta or 12 ounces macaroni noodles |
1 cup cheddar cheese, shredded (i use mexican blend cheese) |
Directions:
1. Place the oil in large saucepan, over medium heat, add beef and onion, cook stirring 10 minutes, drain any fat. Add chili powder, cook stirring 1 minute. Add salsa, corn, kidney bean and tomatoes. Bring to a boil, then reduce to low and cook, covered, for 20-30 minutes, stirring occassionally. 2. Meanwhile cook pasta, until tender. Drain well, add to chili mixture and stir well. Serve immediately sprinkled with shredded cheese. |
