Quick & Easy Black Bean Soup

An easy soup to put together after work. I chop the onion, celery and garlic all together in my food processor. You can add leftover meat such as pork or beef, or vegetables such as corn, beans or potatoes. Try it topped with cilantro, sour cream, avocado or cheddar cheese.
Ingredients:
1 cup onion, chopped
3/4 cup celery, chopped
2 teaspoons garlic, minced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can refried black beans
1 (15 ounce) can diced tomatoes and green chilies
1/2 cup mild thick & chunky salsa
1 1/2 cups beef stock
1 1/2 teaspoons cumin
1/4 teaspoon dry oregano
Directions:
1. Combine all ingredients in a pot, bring to a boil on medium high heat.
2. Reduce heat to a simmer and cook for 25 minutes or until vegetables are tender.
