6 tablespoons oil |
1 cup chopped smoked ham |
1 cup chopped onion |
3 (15 ounce) cans black beans |
2 (14 ounce) cans vegetable broth |
3/4 teaspoon ground cumin |
3/4 teaspoon hot pepper sauce |
1/2 teaspoon dried oregano |
2 tablespoons dried sherry wine |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/2 cup sour cream |
Directions:
1. In a large saucepan, heat oil over medium high heat. Add ham and 2/3 cup onion. Cook, stirring, until onion is softened, about 3 minutes. 2. Puree 2 cans of beans with their liquid. Add puree, remaining beans, vegetable broth, cumin, hot sauce and oregano to saucepan. 3. Cook over medium heat, stirring, until heated through, 8-10 minutes. 4. Add sherry and season with salt and pepper. Serve garnished with remaining onion and sour cream. |
