Quick Cranberry Chip Cookies |

I received these delightful cookies for Christmas a few years ago. I was watching my diet, but I couldn't stay away from them! The tart cranberries blend beautifully with the sweet chocolate and vanilla chips. Ingredients:
1/2 cup butter, softened |
1/2 cup shortening |
3/4 cup sugar |
3/4 cup packed brown sugar |
2 eggs |
1 teaspoon vanilla extract |
2-1/4 cups king arthur unbleached all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup semisweet chocolate chips |
1 cup white baking chips |
1 cup dried cranberries |
1 cup chopped pecans |
Directions:
1. Preheat oven to 375°. In a large bowl, cream butter, shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in the chips, cranberries and pecans. 2. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 9-11 minutes or until golden brown. Cool 2 minutes before removing to wire racks to cool completely. Yield: 6 dozen. |
