I got this recipe from The Biggest Loser Club online....it is so fast and simple I can have this on the table in less than 10 minutes.
Ingredients:
2 teaspoons extra-virgin olive oil
1 cup whole-wheat couscous, dry
1/2 teaspoon salt
1 1/4 cup boiling water
Directions:
1. Heat the oil in a saucepan over medium heat. Add the couscous and stir until lightly browned, about 4 minutes.
2. Sprinkle the salt over the couscous; then add 1 1/4 cups of boiling water and cover. Let the couscous stand for 5 minutes until the water is absorbed. Fluff with a fork before serving.
