This soup is chilled and refreshing and easy. It is great for a hot summer day and even a nice snack because it's not rich yet is thick and smooth and delicious. Serve garnished with raspberry puree for added joy and WOW to guests. Ingredients:
6 cups peach slices, peeled |
6 tbsp. freshly squeezed lemon juice |
1/3 cup sugar |
2 cups plain yogurt |
2 cups peach nectar |
2 tsp. almond extract |
2 cups fresh raspberries |
Directions:
1. In a food processor puree the peaches with the lemon juice and sugar. 2. Pour this into a large bowl and whisk in the yogurt, peach nectar, and almond extract. 3. Chill a couple of hours to let the flavors meld. 4. Meanwhile - puree the berries and sieve that to remove the seeds. 5. Pour it into a ziplock baggie and chill until ready to serve. 6. To serve: ladle the soup into bowls. Snip a corner of the baggie and drizzle the puree in a wide circle and then drag inward with a toothpick to create a flower design. 7. Note - to get the right amount the nectar I bought was in two cans and hence had lots of extra - Idea... serve the extra peach nectar mixed with champagne for Bellinis and have a great time! |
