I've tried tons of chili mix, chili beans, chili everything, but this is the combination I found works best for a quick weekend chili that lasts for atleast 2 meals. Please note, this is a fake out chili. I do not soak my own beans, I do not create my own mix. It's for busy people with little time, but a craving for Chili.
Ingredients:
1 lb ground beef or 1 lb ground turkey
1 (24 ounce) can rotel diced tomatoes and green chili peppers
2 (12 ounce) cans bush's chili beans (mild)
1 large yellow onion (diced)
1 green bell pepper (diced)
1 jalapeno (seeds removed, and diced)
1 teaspoon garlic (minced, or paste)
Directions:
1. *You will need one packet of Wick Fowlers 2 Alarm Chili Kit.
2. 1. Spray 12 inch skillet with non-stick cooking spray and brown ground beef over medium-high heat. Do not drain fat, as it will render out.
3. 2. Add diced onion, bell pepper, jalapeno, and garlic. Cook until onions and peppers are soft. Stir occasional to keep from sticking.
4. 3. In large sauce pan, combine large can Rotel diced and tomatoes and green chili with chili beans and 2 Alarm chili kit over medium-high heat. Omit addition of masa and salt from 2 Alarm Chili Kit.
5. 4. Add ground beef to sauce pan and thoroughly mix.
6. 5. Reduce heat to low, and let simmer for 30 minutes, stirring occasionally.
7. 6. Serve with crackers or corn bread.
