Quick, easy, and delicious. Ingredients:
2 boneless skinless chicken breast halves |
egg substitute (equal to one egg in volume) |
1 cup seasoned bread crumbs |
2 tablespoons butter or 2 tablespoons margarine |
2 cups bottled spaghetti sauce |
1/2 cup shredded fat free mozzarella cheese |
1 tablespoon grated parmesan cheese |
1/4 cup chopped parsley |
Directions:
1. With whatever tool comes easily to hand, flatten the chicken breasts a bit. 2. Dip the chicken in the egg then in the crumbs. 3. Melt the margarine in a skillet and brown the chicken. 4. Add the sauce, reduce heat, cover and simmer 15 minutes. 5. Sprinkle with the cheeses and parsely. 6. Cover and simmer another 5 or so minutes until cheese melts. |
