Quick Chicken and Shells With Fresh Mozzarella Cubes |

This is a perfect dish for those week-night dinners where you want to get something quick and healthy on the table in under 30 minutes. When first made it I was pretty much cleaning out my pantry and allowing my son to pick out garden ingredients. Ingredients:
1/2 cup fresh mozzarella cheese, cut into small cubes |
1/4 cup fresh parsley, chopped |
2 tablespoons fresh basil, chopped |
1/4 cup parmesan cheese, fresh grated |
2 cups chicken, shredded |
2 cups whole wheat pasta, your favorite shape |
1/2 cup grape tomatoes, cut in half |
1/4 cup zucchini, cut into bite sized pieces |
2 tablespoons extra virgin olive oil |
salt |
pepper |
Directions:
1. Cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water. 2. In a deep saute pan, melt olive oil over medium heat. Add zucchini and tomatoes. Cook 4-5 minutes. Add chicken, pasta, pasta water, and parmesan cheese. Cook for another 2-3 minutes. Remove from heat and add herbs and mozzarella cheese. 3. Season to your liking. Serve and enjoy! |
