Chicken and veggies with pasta Ingredients:
2 lbs chicken skinless boneless breast |
1 medium bell pepper |
1 large onion |
2 stalks celery |
16 oz pasta |
14 1/2 oz canned diced tomatoes |
1/2 cup chicken broth |
1 tsp salt |
1/2 tsp pepper |
2 tbs lemon juice |
2 tbs extra virgin olive oil |
1 tsp dried oregano |
1 tsp dried basil |
Directions:
1. Preheat 1 tbs oil in heavy skillet 2. Cut chicken into 1 to 1-1/2 inch cubes-add to skillet 3. Saute until chicken browned and done-remove from pan 4. Prepare pasta according to package directions until al dente 5. Add remaining oil to pan 6. Chop bell pepper, onion and celery into medium dice-add to pan-saute until barely soft 7. Deglaze pan with chicken broth-let cook with veggies about a minute 8. Add tomatoes, oregano, salt, pepper, lemon juice and chicken to pan 9. Let cook together until everything warmed through 10. Add hot pasta to pan and turn off heat-let absorb some of sauce 11. Serve immediately |
