The combination of tart cherries & sweet peach slices make this a delightful dessert. So quick & easy too. Recipe from 'The Pampered Chef.' The picture is mine Thanks to Lana Country for her homemade biscuit mix recipe, the topping was wonderful Ingredients:
biscuit topping |
1 cup biscuit baking mix. - (i used lana countries, 'lana's huge storable mix homemade- instead of bought biscuit substitute') recipe) |
1 tblsp sugar + 1 tsp - divided |
3 tblspn milk |
2 tblspn butter - melted |
1 tsp lemon zest |
1/8 tsp cinnamon |

1 can(21 oz) cherry pie filling |
1 can(8 1/4 oz) sliced peaches in juice - drained & cut into smaller pieces |
2 tsp lemon juice |
1/2 tsp ground cinnamon |
Directions:
1. Mix together in a small bowl, the 1 tsp sugar & the 1/8 tsp cinnamon & set aside 2. Pre-heat oven to 425 degrees 3. Biscuit Topping:- 4. In a small bowl, combine baking mix, 1 Tbspn sugar, milk, butter & the zest. 5. Mix until just combined - set aside 6. Filling:- 7. In a separate, heatproof bowl, combine pie filling, peaches, lemon juice & cinnamon 8. Heat in microwave on high for about 4 mins or until hot - stirring after 2 mins 9. Pour into a 8x8 inch casserole dish 10. Drop 6 scoops of the topping over the hot filling 11. Sprinkle with the reserved cinnamon/sugar mixture 12. Bake for 18 - 20 mins, until the topping is golden |
